Starters
• Homemade coarse pork liver pate with toasted walnut bread
• Springs Sussex smoked salmon served with homemade mayonnaise
• Warm Gruyere and bacon tart
• Pan fried wood pigeon breast with apples and hazelnuts on a bed of mixed leaves
Main Courses
• Pork and leek sausages casseroled in cider with apples, mushrooms, potatoes and crème fraiche
• Steak and Ale pie with shortcrust pastry top
• Local rabbit braised with onions, bacon and mustard
• Strips of local venison fillet pan fried with portabello mushrooms, Madeira and crème fraiche
• Vegetarian mushroom and spinach sausages, bubble ‘n’ squeak and bloody mary chutney
• 10oz Sirloin steak (28 day hung ) chips, peas, mushrooms, onion rings and tomato
Fish
• Crab thermidor – crabmeat in a rich creamy parmesan and mustard sauce, baked in its shell with breadcrumb topping
• Char grilled swordfish steak with mango and spring onion salsa
• Pan fried plaice fillet with homemade tartare sauce
• Whole Sea Bass grilled with chorizo, vine tomatoes and sherry
